La MONFERRINA’s 5- in -1 PASTA MACHINE P. NUOVA NEW MODEL
The La Monferrina Pasta making machine P.NUOVA was the brainchild of a restaurateur who could not purchase anywhere in Italy, a machine suitable for his restaurant. He required a machine larger and more robust than the domestic machine, but, smaller than a full commercial machine. It had to be economical in price, and above all, versatile in action. So he put his ideas to an engineer and after a number of years of development, the machine was finally produced some THIRTY years ago, and has since fulfilled the task for many restaurants, hotels and food kitchens around the world.. AND NOW..it is the choice for Pasta Shops just starting up on a low budget !
The P.NUOVA is truly a “MINI PASTA FACTORY” and many LARGE pasta shops have started with this machine.
The P.NUOVA basic machine is a mixer and sheeter, quite compact and measures 570 x 260 x 500mm - ideal for any kitchen work top. This means that mixing can be undertaken separately whilst the first batch is being sheeted through the rollers. The 170 mm wide sheets can be rolled on to 2 wooden rollers for affixing to the ravioli attachment, or the sheets can be cut into small lengths to be processed through the cutter which is attached to the side of the machine and produces up to16 kgs.lhr of cut pasta. The cutting attachment will allow the small sheets of pasta to be cut into three different sizes/widths - the lst 2mm called linguine, and if cut as 2mm square, will substitute as ‘spaghetti a la chitarra ’; the 2nd is 6mm wide, which is traditionally the tagliatelle or fettuccine; and the 12mm wide is pappardelle...ALL just like the superb quality of ‘home made’ hand -cut pasta .
The construction of the P.NUOVA is stainless steel and aluminium and comes standard for connection to 3 phase power…and… a single phase 220/240 V model is available where it is impossible to have 3 phase (415V) power.
The automatic ravioli attachment can accept all types of fillings and it is important to note that quite soft fillings can be used with the ravioli attachment and thus gives the restaurant or hotel an infinitely variable choice of combinations to add interest to their guest menus.The same applies to ‘deli ’food shops as well.
There is also a gnocchi attachment which can make potato gnocchi at the rate of 30 kgslhr and next is the
EXTRUDER (pressa) which gives a good variety of short pastas as well as extruded spaghettis, buccatini etc.
